The R H Forschner by Victorinox Chef's Knife features an 8-inch blade that is 2-inches wide at the handle. High carbon, stainless steel blade is hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade.

Bought this because it was recommended as the best value for the money on America's test kitchen. If you don't want to spend $$$ for the high priced Chef's knife, then this is a quality choice. Stays sharp, well balance for my liking.

5My "Go-To" KnifeAug 29, 2010
This knife is very versatile and I use it for the majority of my culinary cutting and slicing needs. Good weight, well balanced, non-slip composite grip and keeps a nice edge. I always hand-wash it and advise any users to do the same (basic advice for all high-end knives).

Overall, a great standard Chef's knife at a very reasonable price! I highly recommend this to anyone.

This knife has become my go to knife in the kitchen. I own quite a few of the fancier, more expensive knives but I always reach for this one. Why? It's light weight, sharp [and holds it's sharpness better than the expensive ones], and does the job well. Had I known about this knife sooner, I most definately would have saved the money and purchased this brand only. There's a reason why Cook's Illustrated likes it so much. If you go into a Sur la Table, you can cut with it to feel it-they use them a lot in their classes due to their durability and price point.

I read all the comments by other purchasers and decided that this is the knife for me. It is a bit larger than I anticipated but really works well. Although I am not a fancy cook, every kitchen needs one reliable knife and this fits the bill. If you like a smaller knife, then maybe this is not the size for you but it is nonetheless a very good performing all around knife.

I was reading an issue of Cooks Illustrated, and they had mentioned what a great knife this was. Were they right! I literally use this knife for EVERYTHING! And when you notice that it is getting dull, just sharpen it. I would recommend this to anyone who needs a good knife. I am planning on getting a paring knife and maybe a smaller chef's knife as well. I love this brand!!!!
